Tomato pesto and toasted walnuts

If you want to explore the flavors of Italian food, this pesto is perfect for you.

 

Ingredients

  • 1 cup of walnuts
  • 1 ½ cups dried tomatoes
  • ⅓ of Parmesan cheese
  • 3 garlic cloves, peeled and finely chopped
  • 1 tablespoons balsamic vinegar
  • 1 tablespoon lemon
  • 1 teaspoon very finely grated lemon zest
  • ½ olive oil
  • basil of your choice
  • Salt
  • Black pepper

  1. Toast the nuts in a skillet or oven. When they are lightly browned and you can corroborate it with sight and smell, remove and let them cool.
  2. Place all ingredients in a food processor. Process for a few seconds until you see that they are mixed and finely chopped.
  3. Later, add the olive oil and balsamic vinegar directly to the mixture to obtain the desired consistency.
  4. Make a test and add the missing ingredients, always to your liking.
  5. Once the pesto is ready, remember to add the nuts as you see fit.
  6. Serve the cream as an accompaniment to the food you want, bread, pasta, cookies, chicken or vegetables.
